Riverside Breakfast Recipes

When doing an overnight whitewater rafting trip or scenic float trip down the Colorado River, it can be difficult to come up with meal plans.  With limited space and cookware, breakfast recipes, in particular, can be hard to come by.  Here are some unique and easy breakfast ideas you can use for your next overnight adventure:

Orange Blueberry Muffins

Prepare a pre-packaged blueberry muffin mix and store in a ziploc bag.  Keep in your cooler until ready for use.  In the morning, cut oranges in half and hollow out the innards (eat them, of course.) Snip a corner of the ziploc bag holding your mix and fill the two halves.  Smush the halves together and wrap in tin foil.  Set on the hot stones near your fire for several minutes until cooked through.  When finished, open up your halves and scoop out your orange-flavored blueberry muffins!

Potato Hash

Place packaged hashbrowns, peppers, onions, and your choice of meat in a pocket of tin foil.  Throw into the fire and let the flames do their magic.  When cooked to your liking, remove from the fire, stir, and enjoy.

Beer Pancakes

Mix a can of beer with plain pancake mix at a consistency of your liking.  Poor the batter into your skillet and cook until golden brown.  In a few minutes, you’ll have the easiest pancakes you’ve ever made!
